The word is applied to various foods by country. In Mexico and Mesoamerica the most common are prepared from nixtamalized corn dough. Corn tortillas are especially important in Mexican cuisine and they make her popular tacos, flautas, quesadillas, burritos, enchiladas, chilaquiles, tortilla chips, chimichangas, mules, or enmoladas entomatadas. They are also consumed in other Central American countries, especially in Guatemala and El Salvador. In Mexico, moreover, are made of wheat flour tortillas, which are part of the food repertoire of regional cuisines from the north.
